The Water Authority has started channeling desalinated water to the Sea of Galilee, marking the first ever attempt anywhere in the world to top up a freshwater lake with processed seawater.
The groundbreaking project, years in the making and a sign of both Israel’s success in converting previously unusable water into a vital resource and the rapidly dropping water levels in the country’s largest freshwater reservoir, was quietly inaugurated on October 23.

In a proud moment for Israeli agriculture and artisanal tradition, four Israeli dairies have taken home a remarkable 15 medals at the internationally acclaimed Mondial du Fromage cheese competition in Tours, France. With nearly 1,900 entries judged by 320 experts from around the globe, this victory puts Israel’s cheese making excellence squarely in the international spotlight.
In 2024 over 1.56 billion liters of cow’s milk were produced in Israel, along with about 22 million liters of sheep’s milk, according to data from the Israel Dairy Board.
The average Israeli consumes about 154 liters of milk and dairy products per year, including about 24 pounds of soft cheeses per person—ranking the highest in the world.
